Shaneel Prakash, the owner of Arisha’s Indian Cuisine, is encouraging community support for small businesses during the Hibiscus Carnival while also celebrating the festival’s vibrant atmosphere. Having set up stalls at various events across Viti Levu for the past three years, Prakash values the assistance from his wife in recouping the $2,000 stall fee by the end of Tuesday.
This year, he has been offering a range of options including Indian dishes, BBQ, subs, and hotdogs, with the Indian cuisine seeing particularly strong demand. Looking ahead, Prakash is contemplating expanding the menu for future carnivals.
With favorable weather conditions boosting sales, the stall has been attracting a large number of customers.
