Shaneel Prakash, the owner of Arisha’s Indian Cuisine, is advocating for support of small businesses during the Hibiscus Carnival while emphasizing the enjoyment the festival brings.
Having managed stalls at various events across Viti Levu for three years, Prakash values the assistance from his wife as they work to recover the $2,000 stall fee by Tuesday.
This year, he offers a variety of food options including Indian dishes, BBQ, subs, and hotdogs, with the Indian dishes gaining particular popularity.
Prakash is contemplating the possibility of expanding the menu for future carnivals.
The favorable weather has contributed to increased sales and attracted numerous customers.
