Celebrity chef Duncan Welgemoed, originally from South Africa, is set to make a splash in Fiji later this month as he brings his culinary talents to two hotels owned by the Fiji National Provident Fund (FNPF). The Grand Pacific Hotel (GPH) and the InterContinental Fiji Golf Resort and Spa have announced a series of immersive dining events that will take place in January, showcasing Welgemoed’s fearless approach to flavor and his celebrated African-inspired cuisine.

Welgemoed, who trained in France and now lives in Adelaide, Australia, is the renowned chef behind the acclaimed restaurant Africola. His upcoming events promise to feature an exciting fusion of African flavors with local ingredients, tailored for food enthusiasts and hotel guests.

According to Lachlan Walker, general manager of the IHG Hotels and Resorts portfolio at FNPF, Welgemoed is regarded as one of the most dynamic talents in contemporary cuisine. “His ability to create unforgettable dishes with local ingredients is an incredible opportunity for our guests,” he remarked. The excitement centers around a four-day culinary experience that will include unique dining experiences across both hotels.

Highlights of the dining series include:

1. **Dop & Chop** (InterContinental Fiji Golf Resort & Spa): A three-course meal at the Navo Signature Restaurant on January 16-17, featuring dishes like raw snapper with coconut milk and slow-smoked wagyu rump.

2. **Shebeen Pop-Up** (InterContinental Fiji Golf Resort & Spa): An inventive street food experience at Kama Lounge on January 19, with offerings such as BBQ snapper baguette and cauliflower shawarma.

3. **Eating House Beachside BBQ** (InterContinental Fiji Golf Resort & Spa): A relaxed BBQ at Kama Beachfront on January 20, celebrating bold, smoky flavors.

4. **The Real Makoya Grand Harbour Feast** (Grand Pacific Hotel): A grand finale at Na Toba Poolside in Suva on January 23, featuring a lavish spread of Africola’s signature dishes along with live entertainment and a Polynesian fire show.

This culinary initiative resembles other recent collaborations at the GPH, such as the recent ‘Taste of Texas’ series featuring renowned Texan chef Greg Pawlowski, which engaged guests with flavorful dishes using local Fijian ingredients. This pattern of hosting guest chefs from diverse culinary backgrounds fosters a vibrant dining culture in Fiji, enhancing the local culinary scene while enriching the experiences of both locals and visitors.

The infusion of international chefs like Welgemoed not only enhances Fijian hospitality but also creates opportunities for cultural exchange through cuisine. Both current and upcoming culinary events in Fiji reflect a growing trend of celebrating global flavors, paving the way for even more dynamic culinary offerings in the future.

In summary, Welgemoed’s showcase represents an exciting opportunity for guests to indulge in a unique culinary journey, underscoring the rich tapestry of flavors that can be found in the South Pacific. As the culinary landscape continues to evolve, Fiji stands out as a destination welcoming new influences while sharing its own vibrant flavors.
