The Grand Pacific Hotel (GPH) in Suva recently welcomed renowned Texas chef Greg Pawlowski as part of a celebration marking the new Fiji Airways route connecting Dallas to Fiji. The event took place on a Tuesday evening, highlighting the synergy of Texan culinary traditions with Fiji’s fresh local ingredients.

Chef Pawlowski, celebrated for his innovative approach to Texan cuisine, curated a menu featuring dishes like slow-smoked BBQ brisket, Tex-Mex street tacos, and desserts including classic Mississippi Mud Pie. Lachlan Walker, the portfolio general manager of IHG Hotels & Resorts, expressed the goal of the event as a way to spread excitement about the new flights launching on December 13, while also celebrating the rich flavors of Texas.

Walker shared details of a delightful peach cobbler crafted from local ingredients, emphasizing the event’s celebratory atmosphere. He also mentioned upcoming events featuring guest chefs specializing in Indian cuisine in December and African delicacies in January, showcasing a commitment to diverse culinary experiences.

GPH’s newly appointed general manager, Robert Clark, remarked on the unique opportunity to bring in a chef to share expertise that is not often found in Fiji. He noted that the experience has been refreshing and educational for both the international team and local staff, fostering a joyful and collaborative kitchen environment.

Chef Pawlowski conveyed his excitement about the event and his connection to Dallas, where the new direct flight offers easier access for travelers. He expressed gratitude for the opportunity to share authentic dishes from his home state in a vibrant new setting.

This culinary celebration is part of a larger initiative from IHG to share global flavors, with events already hosted at the InterContinental Fiji Golf Resort & Spa and planned for the Grand Pacific Hotel.
