Having operated stalls for three years at various events throughout Viti Levu, he credits the assistance of his wife in recouping the $2,000 stall fee by the deadline of Tuesday.
Prakash’s offerings include Indian cuisine, barbecue, subs, and hotdogs, with the Indian dishes particularly resonating with attendees this year.
He is contemplating expanding the menu for future carnivals.
Favorable weather conditions have contributed to increased sales, drawing in a larger crowd of customers.
