Shaneel Prakash, the owner of Arisha’s Indian Cuisine, is advocating for support for small businesses during the Hibiscus Carnival and is enjoying the festival atmosphere.

Having run stalls at various events on Viti Levu for three years, Prakash acknowledges the help of his wife in covering a $2,000 stall fee by the upcoming Tuesday.

This year, he is offering a variety of items including Indian dishes, BBQ, subs, and hotdogs, with Indian cuisine being particularly well-received by festival-goers.

Prakash is contemplating expanding his menu for future festivals.

Favorable weather conditions have also contributed to increased sales, drawing in a larger crowd.
